Melon and Prosciutto Salad with Parmesan


  • 3 cups (1/2-inch) cubed honeydew melon
  • 3 cups (1/2-inch) cubed cantaloupe¬†
  • 2 tablespoons fresh mint, julienned
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon freshly ground black pepper
  • 4 ounces thinly sliced prosciutto, cut into thin strips
  • 1/2 cup (2 ounces) shaved fresh Parmesan cheese
  • Fresh black pepper


  1. Combine first 5 ingredients. Toss gently.
  2. When ready to serve, arrange melon mixture on a serving plate. Arrange prosciutto evenly over melon mixture; sprinkle with Parmesan cheese. Top with fresh black pepper. (Note: wait until serving to add the prosciutto and cheese!)
