Homemade Thin Mint Girl Scout Cookies


Chocolate Wafers

  • 8 ounces butter, room temperature
  • 1 C powdered sugar
  • 1 tsp vanilla extract
  • 1 C unsweetened cocoa powder
  • 3/4 tsp salt
  • 1.5 C flour

Chocolate Peppermint Coating:

  • 1 pound semi-sweet chocolate chips
  • peppermint extract, to taste (about 1-1.5 tsp)
  • shortening or oil, as needed for thinning


  1. Preheat oven to 350.
  2. Cream butter until fluffy.  Slowly add powdered sugar, scraping the bowl to combine if necessary.
  3. Add vanilla extract, salt, and cocoa powder.  Mix until combined.
  4. Add the flour and mix until the dough is just slightly crumbly. 
  5. Knead the dough until smooth, forming a ball.  Separate into two balls to make it easier to worth with.
  6. Roll out dough very thin.  (I rolled it between parchment paper).  Using a cookie cutter or the bottom of a glass, cut out the cookie shapes and bake for 10 minutes.  Allow to cool completely.
  7. Meanwhile, melt your chocolate until smooth, adding shortening or oil to thin out if necessary.  Stir in peppermint extract. 
  8. Gently drop the cookies into the melted chocolate, covering completely.  Allow the cookies to to dry and set on wax paper.  Place the cookies in the fridge or freezer, if desired.
