Cotton Candy Cupcakes

  • 1 box (18.25 oz) Duncan Hines French Vanilla cake mix
  • 1 C buttermilk (in place of water called for on box)
  • Vegetable oil (amount called for on box)
  • 4 large eggs (instead of amount called for on box)
  • 1 tsp cotton candy flavoring, divided
  • 2 cans of vanilla frosting
  • pink and blue food coloring
  • cotton candy, for garnish

  1. Preheat oven to 350. Line muffin cups with paper liners.
  2. In a bowl, combine box mix, buttermilk, vegetable oil, eggs, and ½ tsp cotton candy flavoring with an electric mixer.
  3. Fill liners with batter. Cook until done.
  4. When ready to frost, add remaining ½ tsp of cotton candy oil to jars of frosting. Make one pink and one blue using food coloring. To pipe frosting for the “swirl” affect, fill pastry bag with pink and blue frosting, alternating each color.
  5. Garnish each cupcake with cotton candy, immediately before serving. (Cotton candy will disappear if added any sooner!)
