BBQ Chicken Pizza Soup


  • 2 chicken breasts, marinated in BBQ sauce, cooked and shredded
  • 2 tbsp extra virgin olive oil
  • 1 white onion, finely chopped
  • 2 tbsp fresh minced garlic
  • 11 oz can corn
  • 3 C Chicken Broth
  • 1/2 C BBQ Sauce
  • 1/4 tsp garlic salt
  • 1/4 tsp fresh cracked black pepper
  • 1/2 C fresh cilantro leaves, chopped
  • 4 C monterey jack or cheddar cheese


  1. Marinate 2 chicken breasts in BBQ sauce.  Cook as desired, and shred.  (I did mine in the crock pot).  Set aside. 
  2. In a pot over medium heat, add olive oil and sauté onions until soft.  Add garlic, corn, and chicken.  Mix well.
  3. Pour in chicken broth, BBQ sauce, garlic salt, pepper, and cilantro.  Bring to a boil.
  4. Reduce heat to low and simmer for 15 minutes.
  5. Divide soup among oven-safe bowls.  Sprinkle each bowl with 1 C of cheese.  Place under the broiler until brown and bubbly.
