Banana Nut Bread

Yields 8 large slices

Total time: About 1 hour, 30 minutes


  • 2 C ripe mashed bananas (I used 5 small ones)
  • 2 C white flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 C butter
  • 1 C sugar
  • 2 eggs
  • 3/4 C chopped walnuts or pecans (optional, but recommended)


  1. Preheat oven to 325 F.
  2. Mash your bananas in a bowl. Set aside.
  3. In another bowl, sift flour, baking powder and salt.
  4. In a mixing bowl, cream butter, gradually beating in sugar. Add eggs, one at a time, beating well after each addition. Add mashed bananas to sugar mixture.
  5. Blend in sifted ingredients. Fold in nuts, if using.
  6. Pour batter into a greased loaf pan, and bake for at least 1 hour. After 1 hour, check for doneness. (Mine need more like 1 hour and 20 minutes).
