Arugula, Watermelon, and Feta Salad


  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup minced shallots
  • 1 tablespoon honey
  • 2 tbsp olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 6 cups baby arugula
  • 4 cups chilled watermelon cut in 1-inch cubes
  • 12 ounces crumbled feta cheese
  • 1 cup (4 ounces) fresh mint leaves, cut chiffonade style


  1. After cutting watermelon, toss with salt.
  2. Whisk together the lemon juice, shallots, honey. Slowly pour in the olive oil, whisking constantly, to form an emulsion.
  3. Toss the arugula, watermelon, feta, and mint in a large bowl. Sprinkle with black pepper. Drizzle with vinaigrette to lightly coat the salad.
