Peanut butter cacao truffle balls (v, gf)

Semi-sweet, super tasty, rich and decadent - these truffle balls take the classic mix of peanut butter and chocolate and take it to a whole new level!

Vegan and gluten free.


Makes 16 or so balls.

Ingredients:

1/4 cup natural peanut butter

1/4 cup peanut butter powder (I use PB Fit) - or add 2 tbsp further peanut butter + 1 tbsp further of any of the dry ingredients below

1/4 cup coconut flour

1/4 cup desiccated coconut

1/4 cup cacao nibs

1/4 cup cacao /cocoa powder

1/3 cup maple syrup

1 tsp non-dairy milk of choice

1 tsp vanilla essence


Method:

1. Combine all ingredients in a large mixing bowl and stir thoroughly to combine. The mixture will clump together and you will be able to roll it into balls using your hands.

2. Shape your truffle balls and refrigerate until needed; however, these are quite firm at room temperature.
