Peanut butter cacao energy balls (v, gf)

Featuring a delicious ingredient list, minimal preparation time and no food processing.

Makes 20 balls.

2/3 cup peanut butter

1/4 cup cacao or cocoa powder

1/4 cup cacao nibs

1/4 cup desiccated coconut

1/4 cup dried goji berries

1/4 cup dried cranberries (or cherries)

1/4 cup rice malt syrup, agave syrup or maple syrup

Pinch salt (omit if using salted peanut butter)


1. Place all ingredients in a large mixing bowl and mix thoroughly. I found it helped to use the back of a metal spoon to press the ingredients against the side of the bowl, to ensure they are full combined.

2. Roll into balls using your hands. Eat immediately or after refrigeration.

Store in the fridge.
