Chocolate, hazelnut and cranberry truffle balls (v, r)

A delicious snack that is extremely easy (and quick!) to make.

Vegan and easily raw (use raw cacao).

Makes 18 - 20 truffle balls.


Food processor required.

Ingredients:

1 metric cup hazelnuts

1 metric cup dried sweetened cranberries

1/4 metric cup + 1 tbsp desiccated coconut

1/4 metric cup cocoa

1 tsp vanilla


1/4 metric cup desiccated coconut, extra, for coating


Method:

1. Combine all ingredients in a food processor and process until finely ground. Scrape down the sides of the bowl and continue processing until the mix starts to clump together - about 2 minutes. 


2. Roll the mixture into balls and coat in the extra coconut. Chill in the fridge for at least 2 to 4 hours, until set.
