Chocolate, almond and goji berry truffle balls (v)

These truffle balls are perfect for Christmas, or any time of year.
They can be adapted to include dried cherries or cranberries if goji berries don't appeal.
Vegan and high raw.
Makes about 28 small truffle balls.

Ingredients:
1/2 cup raw almonds (~75g)
1/2 cup pitted dates (~75g or 16 dates), roughly chopped
1/4 cup goji berries (~37g)
1/4 cup cocoa powder (~37g)
1 tsp vanilla
Pinch sea salt

1/2 - 1 tsp water, if needed

Method:
1. Combine all ingredients except the water in a food processor and process until combined, about 3 minutes. Add water gradually if needed, until the mixture clumps together and forms a ball.
2. Roll ~28 small balls (~ teaspoon-sized serves) and then refrigerate until set, about 1 hour. Serve from the fridge or at room temperature.
