For the base -

1 cup walnuts
1/2 cup oats
2 tbsp yacon syrup, or rice malt syrup
2 tbsp coconut oil (in liquid form)

For the topping -
1 cup pitted dates
2 small ripe pears (or 1 large)
1/4 cup custard powder
1 tbsp coconut oil (in liquid form)

1. Line a loaf tin with baking paper and set aside.
2. To make the base, combine the walnuts and oats in a food processor until ground. Add the yacon syrup / rice malt syrup and coconut oil and process until the mixture starts to clump together.
3. Press the base mixture into your prepared loaf tin, using your fingers to distribute evenly. Set aside while you make the topping.
4. Wipe out your food processor if necessary and then process the dates until a smooth paste forms. Add the pears and process until fully blended. Add the custard powder and coconut oil and process to incorporate.
5. Pour the topping over the base, and use a spatula to smooth the top. Refrigerate for approximately 4 hours before cutting into slices. Store in the refrigerator.
