Spicy peanut tofu and broccoli (v)

A side dish for 2.
Vegan.

Ingredients:
2 tsp soy sauce
1/2 tsp spicy chilli sauce, or to taste
1/2 tsp coconut sugar or other sweetener to taste
1 tsp grated fresh ginger
1 tsp peanut butter
200g firm tofu, pressed and sliced
2 cups broccoli florets

Method:

1. Combine the soy sauce, chilli sauce, sugar, ginger and peanut butter and whisk to combine.
2. Heat a non-stick pan over medium-high heat and add the tofu and sauce mixture. Stir and flip the tofu regularly until cooked on both sides.
3. Add the broccoli and cook for a further 2 minutes, or longer if you prefer your broccoli well cooked.
