Fig balsamic kale quinoa (v, gf)

A side dish for 2.
Vegan and gluten free.

Ingredients:
1/2 cup uncooked quinoa
1 cup water
2 tsp fig or other fruit-flavoured balsamic vinegar OR 2 tsp balsamic vinegar plus 1 to 2 tbsp chopped dried fruit
1 to 1-1/2 cups kale leaves, roughly chopped

Method:
1. Combine the quinoa and water in a saucepan, cover, and bring to the boil. Reduce heat to low and allow to simmer, covered, for 15 minutes or all the water has been absorbed.
2. Add the balsamic vinegar and chopped kale leaves (and dried fruit if using) and stir through. Allow the mix to stand for 5 minutes before serving.
