Carob coconut breakfast pudding (v)

A fantastic way to start the day!
Makes 2 small or 1 large servings.
Vegan.

Ingredients:
1/2 medium-large avocado (approximately 1/2 cup), well mashed
2 tbsp carob powder (or substitute cocoa)
2 tbsp desiccated coconut
2 tbsp rolled oats
2 tbsp plain non-dairy yoghurt of choice
1/2 - 1 cup of blueberries or fruit of choice

Method:
1. Combine the mashed avocado, carob, coconut, oats and yoghurt in a bowl and stir well to combine. Fold through half of your blueberries (or other fruit) and transfer to your serving dish or dishes. Top with the remaining fruit.
2. Chill for at least 1 hour before serving. Store in the refrigerator.
