Super easy, one bowl, vegan chocolate cake (v)

A delicious vegan cake that you can whip up in under 30 minutes (minus cooling time pre-icing).
Makes a small cake to serve 6 to 8.

For the cake

1/2 cup plain flour
1/4 cup spelt flour
1/4 cup cocoa
1/2 cup caster sugar
1 tsp baking soda
Pinch salt
3/4 cup lukewarm water
1 tsp vanilla
1 tsp apple cider vinegar
1 tbsp vegetable oil
2 tbsp apple sauce

For the chocolate glaze icing
1/4 cup caster sugar
2 tbsp non-dairy spread
1 tbsp non-dairy milk
1 tbsp cocoa

1. Preheat your oven to 180'C (360'F) and select a square or round cake tin. Whilst this recipe makes a small cake, you will be mixing the ingredients in your tin so choosing one with reasonable depth would be helpful if possible.
2. Combine the flours, cocoa, sugar, baking soda and salt in your baking tin and stir to combine. Make a slight well in the centre and add the water, vanilla, vinegar, oil and apple sauce. Stir thoroughly to ensure the ingredients are fully combined (especially in the corners if you are using a square tin).
3. Bake the cake for approximately 20 minutes, until an inserted skewer comes out clean. Allow to cool fully before icing.
4. To make the chocolate glaze icing, combine all ingredients in a saucepan and bring to a light boil, stirring frequently. Reduce heat to low and continue stirring for a further 2 minutes (approximately). Remove from heat and allow to cool for 2 to 3 minutes, stirring regularly. If the icing cools too much and becomes too thick, return to heat briefly.
5. Ice, and decorate as desired!
