Plum and oat bars (v)

An autumnal breakfast or snack.
Vegan.
Makes 8 bars.

Food processor or blender needed.

Ingredients:
6 medium plums
1-1/2 cups rolled oats
1/4 cup raisins
1/4 cup rice malt syrup or other liquid sweetener
1 tbsp melted coconut oil
1 tsp cinnamon or mixed spice
1 tsp vanilla

Up to 1/4 cup non-dairy milk, if needed

Method:
1. Preheat your oven to 160'C (320'F) and prepare a rectangular cake tin.
2. Remove stones from the plums and then puree in a blender or food processor until fairly smooth (they don't need to be perfectly smooth).
3. Combine the pureed plums, oats, raisins, rice malt syrup, coconut oil, cinnamon and vanilla in a mixing bowl. Stir to combine. The batter should be fairly thick, like a thick muffin mixture. Add milk if needed, to thin out.
4. Transfer the batter to your prepared pan and bake for approximately 16 to 20 minutes, until golden on top and firm to the touch. Allow to cool fully before slicing into bars.
