Chocolate zucchini muffins (v)

Super chocolatey, super moist, and super delicious.
Makes 8 small muffins.

1 cup self-raising flour
1/4 cup cocoa
1/4 cup white sugar
1 tbsp chia seeds soaked for ~15 minutes in 1/4 cup water
1/3 cup almond milk (or milk of choice)
3 tbsp apple sauce
2 tbsp vegetable oil
1 tsp vanilla
1 small zucchini, grated

1. Preheat your oven to 180'C and prepare 8 muffin pans.
2. Combine the flour, cocoa and sugar in a large bowl. Add the soaked chia seeds, milk, apple sauce, vegetable oil and vanilla, and stir until fully combined.
3. Add the grated zucchini to the muffin batter and stir to incorporate.
4. Spoon into muffin tins and bake for 20 - 22 minutes.

Allow to cool before eating, and store in the refrigerator.
