Stuffed Bell Peppers my own recipe, so simple it's nearly unbelievable Ingredients 4 cups cooked brown basmati rice 4 largish bell peppers 1 small sweet onion 1 pound lean ground beef* 1 35-oz can CENTO "Italian Peeled Tomatoes"** 1 tablespoon fennel seeds 1 teaspoon dried basil 1 clove garlic, chopped 1 cup water salt to taste Special Equipment large slow cooker stick blender Directions 1. Throw the cooked rice in a large bowl. 2. Slice the tops off the bell pepper. Chop up the edible parts of the tops and throw them in the bowl with the rice. Throw away the stems and seeds. Set the now-hollow bell peppers aside. 3. Chop up the small sweet onion and throw it in the bowl, too. 4. Open the can of tomatoes. Pull out three of them. Chop them up and, that's right, throw them in the bowl. 5. Stir the stuff in the bowl and add salt to taste. I used about a 1/2 teaspoon, but you may want more or less, depending on how you like it. 6. Add the ground beef to the bowl and stir it in. 7. Stuff this mixture into the waiting bell peppers and stick the bell peppers into the slow cooker. (I had a little extra filling. I rolled it into 1" balls to cook at 350 degrees Fahrenheit for 30 minutes and called it breakfast the next day.) 8. Wash your bowl. Wash it well. You don't need to dry it. 9. Dump the remaining tomatoes and their liquid into the clean and empty bowl and use your stick blender to turn it into sauce. 10. Add the fennel seeds, basil, garlic and water to the sauce. Give it a stir and a taste. If it needs a little salt, add some. Pour it over the bell peppers waiting in the crock. 11. Cook on LOW for 6-8 hours, or HIGH for 3-4 hours. If you are uncertain if they are done, use a probe thermometer -- according to the USDA, ground beef should be cooked to an internal temperature of 160 degrees Fahrenheit. 12. Carefully remove the bell peppers and put them on a plate. Top them with some of the sauce in which they stewed. Serve with garlic bread and spinach salad. *And I would bet that ground lamb, turkey, chicken, or even pork would be delicious, too. **I give a specific brand here because tomatoes are out of season and most of the fresh ones are kinda yuck right now (middle of January, go figure!). CENTO "Italian Peeled Tomatoes" have five ingredients -- plum tomatoes, tomato puree, basil leaf, citric acid, and salt -- and tastes like something I'd make myself from fresh tomatoes.

Ingredients: 1 package (2 pounds) refrigerated sauerkraut 1 package (2 to 3 pounds) corned beef brisket 1 cup Thousand Island dressing 16 slices pumpernickel rye bread, toasted 8 slices (1 ounce each) Swiss cheese Directions: 1. Place sauerkraut in 3- to 4-quart slow cooker. Place beef brisket on sauerkraut. (If brisket includes packet of spices, sprinkle spices over brisket.) 2. Cover and cook on Low heat setting 9 to 11 hours. 3. Remove beef from cooker; place on cutting board. Cut beef into slices. To serve, spread 1 tablespoon dressing on each toast slice. Using slotted spoon to remove sauerkraut from cooker, top 8 slices toast with 1/2 cup sauerkraut each. Top sauerkraut with beef slices and cheese slice. Top with remaining toast. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer’s directions for layering ingredients and choosing a temperature.
