What you need:
Refrigerated Pie Dough (the kind that comes in the roll; prepared pie crusts)
Pie Filling (I used strawberry)
Sugar for taste
1 cup Powdered Sugar
1or 2 Tablespoons Milk
Pre-heat oven to 400F.
Next, pour your pie filling into a dish and using a fork or a masher to mash the fruit. I didn't want big fruit clumps in my filling.
IF you need to, this is when you can add sugar to the pie filling. My pie filling was a little tart so I added 1 tablespoon of sugar and stirred it in. Not to tart and not to sweet.
Unroll pie crusts and using a pizza cutter to slice them into small rectangles. I used a business card to get the size of mine.
Place 1 wooden Popsicle stick on top of one of the cut rectangles.
Using a Tablespoon, spoon a little of the pie filling into the center of the rectangle. Make sure not to get the filling to close to the edges.
Lay a second rectangle over the top of the pie filling.
Press around the edges of the rectangles together with a fork to close the mini poptart.
Lay the mini poptarts onto a baking sheet and place in the preheated oven.
Bake the mini poptarts for about 15 minutes or until they begin to brown slightly. (After 10 minutes keep an eye on them as all ovens are different)
For the icing/glaze:
In a bowl, mix together the powdered sugar and milk to make your icing glaze.
Spoon over cooled mini poptart or drizzle with a fork.
Sprinkle with colored sugars or candy sprinkles.
Let glaze rest for about 10 minutes before serving so it has time to thicken and set.
