Hearty Beef, Shrimp, and Potato Meal
Makes 4 Regular Servings (about 1/2 cup of rice and about 1 cup of Beef and Shrimp Mixture)
Mainly for the amounts of Beef, Mushrooms, Potatoes, Corn, you will need to judge by the people you are serving. For example: for the Beef, I don't know the weight/amount, but I bought a packet for about 3 dollars that looked like enough for us. So just judge by how much you eat.
What you need:
2 cups cooked White Rice
1 bag of Medium Shrimp
5 ears of corn
10-15 Medium Red Potatoes
3 Tablespoons butter (divided)
4-5 tablespoons Soy sauce
Salt and Pepper
1 teaspoon onion salt
What to do:
Fill a large stockpot with water and bring to a boil. Once the water is boiling, add the red potatoes and ears of corn.
Boil for about 15 minutes or until tender.
In a large skillet, drizzle olive oil and saute the stew beef until browned. All 2 tablespoons of soy sauce and 1 tablespoon of butter. Mix well. Add onion salt.
Add Salt and Pepper to Taste.
Add 1 bag of Medium Shrimp to the skillet. Add 1 tablespoon of butter. Saute shrimp until done.
Shrimp will turn pinkish and start to curl when done.
Once the red potatoes and corn are tender, drain the water from the pot.
Dice the Red potatoes and add them to the skillet with 2-3 tablespoons of soy sauce. Mix gently. You want to mix in the potatoes but you don't want to mash them.
Butter the corn with the last tablespoon of butter (or leave this step out). Cut the corn on the cob into sections.
Plate your rice. Add the Beef Mixture on top of the rice and Surround with Cut Corn.
