Fried Catfish

Serves 2-4

What you need:

2 pounds of catfish fillets

3 eggs lightly beaten

4 cups milk

1/4 cup hot sauce

1/4 cup A1 Steak sauce

1 table spoon Worcestershire

1 tablespoon freshly squesed lemon juice

3/4 cup seadfood breading mix

1/2 tablespoon of salt

1 tablespoon white pepper

Vegetable Oil (for frying)

What to do:

(You can pan fry these if you do not have a deep fryer, but I'm the worst pan fryer ever so I can't help with that)

Cut catfish into strips or nuggets.

In a large bowl, combine eggs, milk, hot sauce, steak sauce, worcestershire sauce, and lemon juice. Stir well.

In a spereate bowl combine the seafood breading mix, salt and pepper. Stir to combine.

Place the catfish pieces into the egg mixture. Let them soak in this for a few minutes while the oil is heating up. (you can put it in the fridge, but I just left it on the counter because my oil heated in about 2-3 minutes)

Add the oil to the deep fryer and set the deep fryer to 350F.

Next, working with a few pieces at a time, dip the catfish into the breading mixture. Make sure that the pieces are well coated.  Shake off an excess and drop a few pieces into the hot oil. (fry about 2 or 3 at a time, you don't want to over crowd the pan and make the oil temperature drop)

Let them cook for 4-5 minutes, until they become golden brown. Cook longer if you want them to be extra crispy.

Remove them from the oil with a slotted spoon and lay them on a paper towel lined plate to drain the excess oil. Repeat until all catfish pieces are done.
