Chicken and Dumplings
What You Need:
4 cups Chicken Broth ( I buy the Boxed Swanson kind that you can open and close)
Chicken (I usually use about 4-5 skinless, boneless, chicken breast But have also used a whole chicken!)
1 Can of Biscuits (I love the kind with butter already in them)
(This will serve 3-4 people, depending on how much they eat) Double for more
What to do:
Cut Chicken into cubes and boil until done. (I use a stock pot for this) Set aside.
(For this blog post I used a whole chicken because it was on sale for $4.00)
In a saucepan simmer your chicken broth on low (I use about 4 cups).
Flour the cutting board. Flour each side of the biscuit and then flatten the raw biscuits out using the back of the spoon until they are as flat as you can get them.
Then cut the flattened biscuits into stripes and then into cubes.
Toss the biscuit cubes in flour until well coated. Drop into the chicken broth.
Turn your chicken broth to Medium and let it simmer for about 15 minutes. It will start to thicken up.
While it is simmering if it looks like it is getting to thick for your liking just add more chicken broth (if you don't have any more from the can use some of the water you boiled the chicken in).
After about 15 minutes add your chicken and stir. add a little butter and salt and pepper. Simmer for another 5-7 minutes.
