You really don't have to have baked beans just because you are grilling.  These wonderful beans are really a nice change for summertime cookouts as well as winter comfort food.

1 pound of dried pinto beans
2 medium onions
2 or 3 cloves of garlic
About 1/4 pound diced salt pork
1 to 3 teaspoons chili powder (optional, but very good)
1/2 cup canned chopped green chiles (optional)
Salt to taste

Have you heard the old country expression "look your beans"?  It just means to check the pinto beans for stones and faulty beans and remove them.  After you have looked your beans wash through several changes of water.  Put into a large kettle, cover with water and soak overnight.  The next day, drain the beans and cover with fresh water.  Add whole onions, garlic, diced pork, chili powder and green chilies, if using.
