4 ounces cream cheese, room temperature
½ cup plus 2 tablespoons unsalted butter, room temperature
1 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
½ cup instant milk powder
1½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
2 cups coarsely chopped Famous Chocolate Wafers (half a package)
1 cup chopped white chocolate
Preheat oven to 350ºF. Line a baking sheet with Silpat or parchment paper.
In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and butter together until light and creamy, about a minute. Add the brown sugar, egg, vanilla extract and beat for two minutes. Add the instant milk powder and beat another two minutes until incorpporated and light and fluffy. Add in the dry ingredients and beat on low speed until fully incorporated. Fold in the Famous Wafers and white chocolate.
Form 2-inch balls of cookie dough and
press down to flatten. Arrange racks ⅓ from top and bottom of oven. Bake
for 5 minutes, switch the top and lower trays and rotate the trays
front to back. Bake for another 3-4 minutes, or until brown around the
edges. Remove from oven and let cool on wire racks.
