Carrot Cake Petit Fours

Makes 24 petit fours

2/3 cup unsalted butter, softened
2 cups sugar
4 large eggs
1teaspoon vanilla extract
2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 ground cinnamon
1/4 teaspoon ground cloves
2/3 cup heavy cream
2/3 cup grated carrot
1/recipe Cream Cheese Filling (recipe follows)
1/(1 1/2-pound) package vanilla or white chocolate candy coating
1/2 to 1 block paraffin
Garnish: 7-ounces marzipan, sliced almonds, 1 (2-ounce)block milk chocolate, melted
1. Preheat oven to 325*. Lightly grease and flour jelly roll pan. 
2. In large bowl and using electric mixer at medium speed, combine butter and sugar; beat until light and creamy, about 2-3 minutes.  Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
3. In medium bowl, sift together flour, baking powder, baking soda,cinnamon, and cloves.
4. Add dry ingredients alternately with cream to butter mixture.  Fold in grated carrot.  Pour batter into prepared pan.
5. Bake 15 minutes, or until wooden pick inserted near center comes out clean.  Cool completely.
6. Using 2-inch square cutter, cut cake into squares.  With serrated knife, slice each square in half horizontally. Evenly spread Cream Chees Filling on bottom half of eachsquare, top with remaining half. Place on cookie sheet and freeze 1 hour.
7. Using microwave safe bowl, melt candy coating and paraffin in microwave or melt in top of double boiler over boiling water.  Using skewer, dip each sandwich to coat.  Place petit fours on baking rack positioned over waxed paper to dry.
8. To garnish, roll marzipan into 24 (1-inch ) balls. Positiontwo almond slices into balls for bunny ears.  Using toothpick and melted chocolate, paint on eyes, nose, and whiskers.  Place one bunny head on each petit four.
CREAM CHEESE FILLING
Makes about 11/2 cups
4 ounces cream cheese, softened
1 tablespoon butter, softened
3/4 cup confectionsers' sugar
1/4 cup honey
1/4 teaspoon vanilla extract
1/4 teaspoon orange extract
1. In medium bowl and using electric mixer at medium speed, beat cream cheese and butter until smooth and creamy.
2. Gradually add confertioners' sugar, mixing well.  Beat in honey, vanilla extract, and orange extract.
