Skillet Souffle for Two

This is an incredible dish that really takes eggs to the next level. While relatively simple to throw together, the result is a light, fluffy egg souffle with delicious flavor from the dill and goat cheese. Enjoy!

Serves 2. 5 pts+ per serving.

  • 3 eggs
  • 2 tbsp fresh dill (or herb of choice)
  • 1/2 tbsp butter
  • 1 oz soft goal cheese
  • salt and pepper to taste
  1. Preheat oven to 400º.
  2. Separate eggs into two separate bowls.
  3. Mix the yolks with the dill, salt and pepper and beat with a fork until well combined.
  4. Using an electric mixer, beat egg whites until soft peaks form, about 3 minutes.
  5. Combine yolk mixture with egg whites.
  6. Melt butter in a cast iron skillet, swirling around to cover the entire bottom of the skillet.
  7. Pour egg mixture into greased skillet and crumble goat cheese on top.
  8. Bake for 10 minutes until slightly browned on top.
  9. Eat!
