No Bake Mini Chocolate Chip Oatmeal Cookies

These cookies are great because they come together in just minutes with a super simple ingredient list. I love these as a pre or post workout snack, and I love that the recipe caters to just 1-2 servings so I don't eat the whole batch, but feel free to multiply this recipe as you like. Enjoy!

Yield: 4 small cookies, 1 pt+ each, or 4 pts+ for entire recipe

  • 2 tbsp peanut flour (15 grams)
  • 2 tbsp rolled oats
  • 2 tsp mini chocolate chips
  • 1 packet truvia
  • dash salt
  • 1 tbsp + 1 tsp water
  1. Combine peanut flour, salt, and water, and mix together to form a paste.
  2. To that bowl, add the rest of the ingredients and stir together to form a dough.
  3. Divide into four equal size dough balls and place on wax or parchment paper.
  4. Freeze for 10 minutes and enjoy!
