No-Frills BBQ
No-Frills BBQ
This is how I judge a BBQ restaurant - not on the signage or the decor, but on the 3-meat combo platter. Grilled chicken, pork ribs and beef brisket, with cornbread, mac & cheese, and baked beans. If this were Iron Chef, this meal would score high on taste but low on presentation. No garnishes, and the sauce is pretty much up to you to add, but the pork ribs were great and the brisket was really well-cooked. Like melt-in-your-mouth brisket. The beer SHOULD have been a Sixpoint All-Action Ale. (note the 6-pointed star on the glass) But the keg ran out just as they were pouring my beer. In most restaurants I would expect someone to just change the keg, but either the staff was really lazy, or there was no replacement keg - this was a holiday weekend, after all. So I got a glass of Blue Point Spring Fling instead. It's too bad, I think the hoppier Sixpoint would have gone better with the BBQ meats. While we were paying, I saw that they had the Porkslap Pale Ale in cans, but not on tap. Damn. Coulda had that too.

????,Hot Tofu (247)
It's so simple, popular and traditional SiChuan dish that when people talking about SiChuan food, it must be on top 3. Many restaurants outside of SiChuan can not cook it right way, for example, to use beef not pork, or to use starch batter in order to soften tofu. I, by chance, learned how to cook it with the traditional SiChuan method. But it's a little bit complex because it depends on many things that I can not find right now. So I made some changes, and it's still delicious. Put tofu in boiled water and continue heating for 3 minutes, and a little bit salt in water as well as. Stir fry hot bean paste till oil turns red, then add garlic, chives and minced pork, continue heating for a while. Put two spoons of sugar and two spoons of water in, and continue heating till the gravy is boiled. Then, add underdone tofu in cooked hot bean paste, and stew all material till gravy gets heavy. It's done and it's time to enjoy. ????,????
