Kalderetang kambing is goat meat cooked in soy sauce, coconut milk, and tomato sauce and garnished with slices of potato, carrots, red bell pepper, and garbanzos beans. Kaldereta is a fusion of Occidental and Oriental cuisines --- cooking in tomato sauce is from the Filipino Spanish heritage while that in coconut milk is very Malay. In these milk cans were cooked the goat meat ... together with hot stones and some potatoes, carrots ... it is given in several layers into the cans. They were closed and put into the fire for nearly one hour.
