Lambrusco (red sparkling italian wine) with apple and black grape Per questo ottimo aperitivo, ho utilizzato un Lambrusco Amabile di Modena IGP di 11% vol., tenuto in fresco ad una temperatura di 8°C. INGREDIENTI: per circa 6 aperitivi 1 bottiglia di Lambrusco amabile 1 mela renetta circa 15 acini di uva nera una spruzzata di succo di limone PREPARAZIONE: Lavate bene la frutta in acqua fresca. Prendete un passaverdura, e scegliete tra quelle che avete, la "retina" con i buchini piu piccoli. Posizionate il passaverdura su una ciotola, tagliate gli acini d'uva a meta e iniziate a girare fino ad estrarre dall'uva tutto il succo possibile. Se il vostro robot da cucina possiede una centrifuga, tutto questo lo farete in un attimo. Sbucciate la mela, tagliatela a meta, togliete il torsolo e grattugiatela (o passatela al mixer). Unite la polpa ottenuta al succo di uva e date una spruzzata di limone, per non far annerire la mela. Mescolate. Versate con l'aiuto di un cucchiaio un po' di composto in bicchieri a flute. Se volete un aperitivo piu fruttato, riempite i bicchieri per due terzi, se lo volete piu alcoolico riempiteli soltanto per un terzo... indovinate io cosa ho scelto? Decorate con acini di uva leggermente incisi con un coltello e "infilzati" sul bordo dei bicchieri. Versate nei bicchieri il Lambrusco tenuto in fresco...e servite!
