Again, several things: 1. Chris has become awfully chummy with our butcher. Enough-so that I just called him 'ours,' when in fact he is employed by Zupan's Market. I will never complain about this. No. Nor will I complain about having to hang around the meat counter for 24 minutes while Our Butcher manhandles a side of beef on our behalf. Nor will I complain when this man decides our meal for us, based on Chris' brief statements like "I want to slow cook something..." Nope. No complaining here. 2. I love photographing food. LOVE IT. I picked the ingredient for a home cooking challenge last week: beef short ribs. Both cooks had great results. The rib on the left was slow-cooked in the oven so it was crisped on the outside with the consistency of a great steak in the center. The rib on the right was prepared in a stovetop pressure cooker and the meat was wonderfully tender, falling off the bone.
