Pepperoni Grilled Chicken
Another kid favorite at my house. Probably because it reminds them of pizza and what kid doesn’t love pizza. It is an easy one, and one that I make a little different every time the main thing just being to grill pepperoni with the chicken to flavor it up. Pan grill chicken breasts (left whole today, sometimes they get chopped up), with oregano (1 teaspoonish), minced garlic (1 tsp+), ? red bell pepper, ? green bell pepper, and a handful of chopped up pepperoni in approximately a tablespoon of butter or olive oil. When the chicken breast are almost finished scoop some of the pepperoni onto the top of the breasts and sprinkle cheese on it (I like parmesan or mozzarella) so it can melt down a bit while the second side browns.
Low Carb "Meatza"
With vegetarian toppings, of course... Recipe: 500 grams of ground pork Red pepper capers green olives pizza sauce mozzerella cheese fresh basil Flatten out ground pork onto pizza tray (or weird silicon pizza tray like I've used...) and bake for about 20 minutes until done. It shrinks a bit... then drain off the fat (without letting the 'base' slip off...!) Top with pizza toppings! I used the above ingredients but you can use whatever you want - although putting hamburger meat would probably be a li'l overkill.... Inspired by Dana Carpander's low carb cookbook, although I'm not very good at following instructions so I kinda made it up....
