Inspired Indian Cuisine
Yield: 6 servings
1/2 cup green lentils
1/2 cup red lentils
1 tsp salt
1 tsp turmeric
1 tbsp butter
1 medium onion, finely chopped
1 tbsp ginger, grated
cup tomatoes, chopped
1/2 tsp ground cayenne pepper
cilantro, finely chopped
- Place lentils, water, salt, and
turmeric in a large pot and stir.
- Bring lentils to a boil,
then stir and cover most of the pot with the lid.
- Cook for
about 30 minutes, or until lentils are tender.
- While the
lentils are cooking, melt the butter in a shallow frying pan over medium
- Add cumin seeds and allow them to sizzle for 15
- Add onions and saute until brown, about 5 minutes.
- Add ginger, tomatoes, and cayenne and saute, stirring
regularly, for 5 minutes or until the oil glistens on top.
