THE Stuffed Zucchini Boats Full of Yummy

Serving Size: Depends on the amount of meat and number of zucchini
I cooked 3 zucchini {6 boats} and used less than 1Lb of meat ..

-Cooked Brown Rice
-Cooked Quinoa

-Whole zucchini {as many as you want to bake, rinse, dry, and slice lengthwise}
-Ground meat {or tofu crumbles}
-Onion Flakes/sauteed onion
-1 regular size can of cut tomatoes with juice {I got mine from Costco}
-Small can of green chiles
-Minced garlic, fresh or in water {I got mine from Costco}
-salt, pepper, and cumin

Cook some brown rice.  I made 1C brown rice with 2C chicken stock in a rice cooker. {mine has a "brown rice" button}

At the same time cook some quinoa on the stove top.  I heated 2C water until boiling, added 1C quinoa,

-Heat pan on medium/high
-Spray some olive oil in pan

  1. -Heat some minced garlic
  2. -Brown the ground beef {or turkey or chicken, whatever you like}
  3. -Sprinkle in some onion flakes
  4. -Season meat with salt and pepper
  5. -Add a can of cut tomatoes, juice and all
  6. -Add some drained, minced/diced Ortega green chiles
  7. -Season with some more salt/pepper
  8. -Bring mixture to boil, and simmer down until all the flavors merry
  9. -Turn off and remove from heat.

Add some quinoa and brown rice to the meat mixture.

While your meat mix is simmering, slice your zucchini lengthwise, scoop out seeds and innards, and chop some of the seeds/innards and add to the meat.  Discard the rest, or use them for whatever you wish. 

Pick a baking dish of your choice {I used a large clear Pyrex dish}, arrange your empty zucchini boats, and fill with your skillet filling.

Pour in about 1/2" of water in dish.  This will help soften and cook the zucchini. 

Bake for about 25-30min, or until zucchini is fork-tender.  If the time is nearing the end and your zucchini isn't tender yet, cover with tin foil, and when time is up, you can keep the foil on until you're ready to serve. 

{These directions are exactly how I baked my zucchini boats.  On two of them I added a slice of jalapeno cheese and melted .. however, Mr. Google at those ones, I never tried those, but I had the regular ones.  He said they were gooood, so with or without cheese is delicious!}

We completed our meal with Oven Roasted Corn on the Cob and Juicy Ripe Watermelon.
