My stepmother taught me how to make a dish she called "oven stew." I don't consider it to be a country stew, but it is a European style beef dish cooked in a wine sauce. First I cut up two pounds (one kilogram) of beef stew meat into pieces the size of my thumbnail and grind black Malabar pepper over the meat. Then I put the meat into a pot and add a pound or so of sliced mushrooms, a medium onion sliced and diced, a package of Lipton's Onion Soup mix for seasoning, a can of concentrated cream of mushroom soup as a thickener, and a half cup of any decent red table wine. Stir up all the ingredients thoroughly to mix, close the lid, and put the pot into a preheated oven. All the prep work takes about half an hour. Bake at 300 degrees F. for three hours. Check on it and stir every hour, or you can go off shopping or to a concert. Serve the "oven stew" over egg noodles. I always serve this meal with a good red wine, a mixed salad, a good bread, and I normally cook it only for special occasions. In addition to my girlfriend, two or three of the girls from my office were supposed to come over for a dinner party and meet Leslie Anne. They didn't show up, so it was a private dinner. Oh well.

I like to make up recipes as I go. A guy at work gave me an egg plant, some peppers and summer squash. So I decided to try something new. I got out my mandolin and thin sliced half the egg plant (the whole thing would have been too much), a jalapeno, a hot banana pepper, the squash, and half a red onion. I layered them with chunky pasta sauce (big chunks of tomato and carrots), a mixture of ricotta cheese (mixed with garlic, brown eggs, bread crumbs, coriander flakes, black pepper and oregano flakes), mushrooms, mild cheddar, sharp cheddar, provolone, mozzarella, Parmesan, and Romano cheeses. I lightly salted it and it is now in the oven, baking slowly for about 90 minutes to make sure the vegetables are cooked.
