Talk about being off my game!!! Something going on this week. Things are just not turning out. I decided to bake cupcakes for some of my co-workers last night. As I was spooning the batter into the pan i realised it was far too heavy and thick. Hm, i looked around. Did i put the milk in? Yah, there's the jug i used to measure 1 cup of milk. OMG!!! ONE CUP OF MILK, it was meant to be TWO CUPS!!!!! Madly squeeze whatever i've put in the cupcake cases back into my mixer, mix in another cup of milk. Hm, the batter doesn't look quite right. And right I was, the whole batch was only good for cake truffles. They didn't rise much at all, and were rather gummy. 45 cupcakes ruined!!! BUMMER!!!! Nevermind, I decide to make those egg decorations first, and if there's time after the decorations are made, then bake another batch. Luckily the second batch came out a little better, not exactly as they normally are, but one of the guys at work said "The cupcakes are superb!!" I'm not gonna bake for at least 4 days!!! (let's see how that resolution works out for me) Anyhoo these are moist choc buttercake with choc buttercream and a fondant egg. Love these boxes that Fran bought from a company in QLD.
