Roasted Red Pepper Salsa

Recipe.

4 whole red bell peppers

2 cloves of garlic

150 ml extra virgin olive oil

1 Tbsp chopped Italian parsley

salt and black pepper to taste

juice of one lemon

Method

 Put the peppers whole directly onto the hot coals. Roast them for about 20 to 30 min. Move them often and cook untill soft. Peel off the skin and remove the seeds. Peel and chop the garlic. Mix all the ingredients together in a bowl.

How to serve.

 Goes well with just about anything.

BBQ Top Tips

 If you cook them untill they are quite soft, this will intensify the sweetness greatly. Careful not to burn them though...you can start them in the middle and then move them to the edge of the coals to finish them slowly.
