Pork and Pineapple with Thai Curry Butter

Recipe.

600g pork belly

100g bean sprouts

1/2 large onion sliced

1/4 pineapple sliced

4 Tbsp of Thai curry butter

100g pack choy sliced

Method

   Cut the pork belly into 5 chunks, and season with salt and pepper. I normaly cook these on the SOUVLA SKEWER for about 40 to 50 minutes to melt the thick layer of fat...If don't have a souvla...then just cook them on the normal BBQ. They will drip a lot of fat which may cause flames so have a look at TOP TIPS . When the pork is ready, slice it and make tin foil parcels with the recipe ingredients above. The method is similar to the recipe for BEAN SPROUTS IN FOIL .

How to serve.

 just open the foil and eat with chop sticks or a fork. you may like to use a spoon too as the juices are fantastic.
