Halloumi Skewers with Roasted Red Pepper Salsa and Rocket

200g  Halloumi Cheese

3 Tbsp extra virgin olive oil (Filippo Berio)

1 clove of garlic (crushed)

Freshly ground black pepper (to taste)

6 Tbsp Roasted red pepper salsa (Recipe link)

50g Rocket

1 Fresh lemon

8 mini Pitta bread

1 Red Onion (thinly sliced) 

1 Tbsp  Flat parsley (chopped)


Prepare the Roasted red pepper salsa first, this will take about an hour. Slice the red onion very thinly. Cut the Halloumi cheese into  large dice (2cm)  and marinade with black pepper, olive oil and garlic. Put the Halloumi onto skewers and BBQ  over hot coals until nicely colored. 

     How to serve

Warm the pitta bread, cut an opening in each bread and stuff the rocket inside, then add the hot halloumi cheese, squeeze some fresh lemon juice on top. Pour some roasted red pepper sauce on top and finish with some sliced red onion and chopped parsley. serve with your favorite chilled white wine, salad and olives. If you like add in some chicken souvlaki or  lamb souvla.

BBQ Top Tips

Careful as Halloumi can color quickly on a hot BBQ. Turn often and take care. Before you put on the grill drain off the excess oil from marinade, this will help prevent it from burning.
