THE DAY THE SEA BLESSED US WITH AN AMAZING CATCH!!
- 2 to 3 kg seabream
- 180 ml olive oil (Filippo Berio)
- 6 cloves garlic
- 3 tsp black pepper
- Maldon sea salt to taste
- fresh thyme to taste
- fresh rosemary to taste
- fresh parsley to taste
Chop the herbs and garlic roughly. Put the oil, herbs garlic, salt and pepper in a bowl and mix together. Put the fish in a tray and spread this marinade all over the fish. Marinate for 2 hours. Cook on the BBQ, If the fish is thick it may take about 30 to 40 minutes to cook.
How to serve.
Serve with lemon wedges, crazy hot sauce and cold white wine.
BBQ Top Tips
- If you are lucky and catch a 4 kg sea bream like I did (we caught five acually) then a fish of that size takes time on the BBQ, therefore I recomend to butterfly cut the fish. To do this using a sharp knife make a long cut along the back of the fish, just above the bone. Dont cut though the belly though. Open the fish like a book (leave the bone in) this will help hold the fish together while cooking.
- When you cook the fish use two wire racks the size of the fish one under and one over the fish so that the fish does'nt break when you turn it over.
