焼き鶏

Recipe for 4 servings







Recipe.

500g chicken leg (off the bone)

200ml soy sauce

200ml sake

100ml mirin

100g sugar

1 tsp of shichimi (Japanese 7 taste chili powder)

10 Bamboo skewers

Method

  Put the soy, sake, mirin and sugar into a pan simmer slowly until reduced by 30%. leave too cool down. Cut the chicken into bite sized pieces. put the chicken onto bamboo skewers. BBq the chicken skewers until 80% cooked (about 5 to 7 minutes). dip the chicken into the sauce and then return to the BBQ. cook for 2 minutes. carefull turn them often or they will burn. dip them a second and third time into the sauce, and each time return too the BBQ.

 

 How to serve.

 serve with salad and sprinkle with shichimi powder.
