Turkey Club Rolls

7 large  rice paper rounds
leaf lettuce
7 slices of deli turkey or leftovers if you have them
1 carrot, julienned
1 tomato, seeded and julienned 
half a head of radicchio, shredded
2 green onions, julienned
10 slices of bacon, cooked crisp
miracle whip
 
Cook your bacon and prepare all the vegetables.  Have everything ready to go. Fill a pie plate with very hot water.  Working with one roll at a time, dip rice paper in hot water until pliable, about 15 seconds.  Place on a clean tea towel.  Lay a lettuce leaf towards one end of the rice paper.  Spread a bit of miracle whip or mayonnaise on the lettuce.  Top with a slice of turkey, then arrange some radicchio, carrot, green onion, about one and a half slices of bacon and then tomato.  Fold in sides and roll up tight.  Repeat with remaining rounds.  Wrap each rolls in a damp paper towel, put in resealable bag and chill.  Serve with your choice of dip.  I used some sweet and sour sauce I had on hand.
