S'mores Snack Cake

  • 1/2 cup (1 stick) unsalted butter, softened 
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups graham crackers crumbs, 20 squares
  • 1/2 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 3/4 cup milk, room temperature
  • 1 cup chocolate chips*
  • 2 cup mini marshmallows, I used the large ones, cut in half.*
 
Preheat the oven to 350 degrees F. 

Coat a 9 x 13 inch pan with nonstick cooking spray. 

Whisk together graham cracker crumbs, flour, and baking powder in a medium bowl. Set aside. Beat butter and sugar together until smooth and creamy. Add eggs one at a time, then add vanilla.  Mix in one third of the flour and then one half of the milk. Alternate until both milk and flour mixture are gone.  You should have started and ended with the flour.
 
Transfer batter to prepared pan and bake for 20 to 30 minutes or until a pick inserted in the center comes out clean.  Once the cake is removed from the oven turn oven to broil and then sprinkle the chocolate chips over the hot cake.  Allow the chips to soften.  After the chips look "shiny" spread them with an offset spatula and then sprinkle marshmallows on top.  Place the cake back into the oven to melt & char marshmallows. Watch carefully.  Remove from oven once marshmallows are broiled to your liking . Can be served warm or at room temperature. Suggestion, serve warm while chocolate is warm and marshmallows are still melty, YUM!

Note:  You can use how much or how little you'd like of the chips and marshmallows.  Actual Hershey's bars would also work.
