Fresh Apple Cake

Serves: 8 - 10

2 cups sugar
1-1/2 cups canola oil
2 well beaten eggs
2 teaspoons vanilla
Juice of 1/2 lemon
1 teaspoon salt
3 cups all-purpose flour
1-1/4 teaspoons baking soda
2 cups peeled tart apples, chopped (such as Granny Smith)
1 cup chopped dates, preferably Madjool
2 cups pecans, chopped

Preheat oven to 160C (325F) degrees. Grease and flour an angel food pan.

Combine sugar, oil, eggs, vanilla, lemon juice and salt in large bowl. Beat well. Sift the flour and the soda into a separate bowl. Gradually add the flour mixture to the sugar mixture and beat well. Add the apples, dates and pecans. The batter will be very thick, so you will have to mix by hand.

Bake for 1 to 1-1/2 hours, depending on the pan you use. The cake should be well browned and a toothpick should come out reasonably clean.

Best made a day or two ahead.
