Elsa's White Lebkuchen

  • 4 eggs
  • 2 1/2 cups sugar
  • 4 1/4 cups flour
  • 1/4 cup ground cinnamon
  • 2 tsp ground cloves
  • 1/2 tsp baking powder
  • 1 cup almonds, ground
  • 1/2 cup candied orange peel, chopped or ground
  • 1/2 cup candied citron, chopped or ground

For glaze:

  • 2 cups confectioners' sugar
  • 4 tablespoons hot water

What to do:

1.  Sift together flour, cinnamon, cloves and baking powder.  Set aside.

2.  Combine ground almonds and chopped or ground orange peel and citron.  Set aside.

3.  In the bowl of a stand mixer, combine eggs and sugar until thick and pale. 

4.  Add flour mixture and mix until just combined.

5.  Stir in nuts and citrus by hand.

6.  Let rest about half an hour, or wrap tightly and chill in the refrigerator until ready to use.

7.  Working with half the dough at a time, roll out onto floured board or counter until desired thickness - 1/4 " for thicker, chewier cookies, or 1/8" for crisper cookies.

8.  Cut out circles about 2" in diameter (it's really up to you, depending on the size and quantity of cookies you want) and place on parchment lined baking sheets.

9.  Bake in a preheated 300 degrees F oven for about 15 minutes, rotating the pans halfway through.

10.  Allow cookies to cool completely before glazing.

11.  To glazed - whisk together the confectioners' sugar and hot water until completely smooth and shiny.  Spread or paint glaze on top of each cookie and allow glaze to dry completely (overnight is good) before packing cookies in containers, otherwise the glaze on one cookie will stick to the cookie above it.

 Makes around 4 dozen cookies.
