Elsa's German Butter Cookies

  • 1/2 lb (2 sticks) unsalted butter, room temperature
  • 3/4 lb sugar (a scant 2 cups)
  • 4 eggs, plus 2 yolks for glaze
  • 1 lb all-purpose flour (4 cups plus 2 tablespoons)
  • 1 knife-tip of baking soda (about 1/16th of a teaspoon
  • the zest of one lemon

What to do:

1.  Sift together the flour and baking soda.  Stir in the lemon zest.

2.  Cream the butter in a stand mixer til very soft.

3.  Add sugar and mix until light, then add in eggs, one at a time, scraping down the bowl after each egg is thoroughly incorporated in the butter/sugar mixture.

4.  Add in the flour mixture on low speed and mix until just combined.

5.  Wrap the dough in plastic and refrigerate for a couple of hours. 

6.  When ready to bake the cookies, preheat the oven to 300 degrees F. 

7.  Working with small portions of dough at a time, roll out the dough to about 1/4 inch thick, cut out cookies and place them on a parchment lined baking sheet. 

8.  Put the baking sheet in the fridge for about fifteen minutes or so to firm up the dough. 

9.  Brush lightly with the egg wash and bake for 10-15 minutes, depending on the size of the cookie.

*  You can also decorate with sparkling or colored sugar or other decorations, of course.
