Elsa's Almond Stars
~~ a printable barefoot kitchen witch recipe ~~


  • 1 lb confectioners' sugar, sifted
  • 1/2 lb almonds, ground
  • 1/2 lb hazelnuts, ground
  • zest of one lemon
  • 1 tsp almond extract
  • 6 egg whites, room temperature (less 4 tablespoons - for glaze)
  • granulated sugar, for dusting work surface

What to do:

1.  Combine almonds, hazelnuts and lemon zest.  Set aside.

2.  In stand mixer, beat egg whites until stiff.  (Optional - add in a pinch of cream of tartar while beating to help strengthen the whites.)

3.  Add confectioners' sugar to whites and beat until very stiff.

4.  Fold in nuts, zest, and almond extract.

5.  Chill dough - can be left overnight.  (Don't let it go longer, though.)

6.  Roll out dough, a small amount at a time, on granulated sugar and cut into stars.

7.  Place stars on parchment lined baking sheet and brush with remaining egg whites.

8.  Bake 275-300 degrees F for 15-20 minutes until crisp but not browned.

9.  Allow cookies to cool completely on parchment and then gently peel the paper away from the cookies to separate.
