One casserole of tastiness, bones removed and in the bowl on the far side. I borrowed and adapted this recipe from a local foods magazine I picked up in Austin. It was touted as a great one-pot Thanksgiving meal, a sort of Texas barbecue adaptation of the traditional French cassoulet. Lacking crucial items like duck confit and goose legs, I winged this one with a few random ingredients. I did go out of my way to include a good french bean, though. This recipe is designed to be made a day in advance, then reheated with a breadcrumb topping on the day of. Two days early: - Soak 1lb beans for 24 hours (I used flageolets) - Salt 2 turkey legs, 2 lamb shanks, and 4 beef short ribs overnight One day early: - Brown the meats above, plus 1lb kielbasa, in a bit of oil in a heavy pan. Do not cook through. - Drain and rinse beans, then put in a pot with 2 quarts of water. Bring to a boil, then remove from heat and cover. - In fats left over from browning meats, cook 2 thinly sliced onions about 10 mins. Throw in a handful of peeled garlic, some fresh thyme, and a bay leaf. Then add 2-3 cups of tomato puree (from fresh, or using a large can of diced) and let all the liquids cook down until it starts sticking to the pan a little. - Add the beans and the cooking liquid to the pan with the tomato/onions, bring to a boil, then remove from heat. I couldn't fit all the bean liquid into my pot at this stage, so I just added as much as I could. - Put the beans/tomato mixture in a large casserole and put in all the meats so they are mostly under the liquid, but sticking out the top a bit. Remove a bit of liquid at this point if you have too much. - Cook for three to three and a half hours at 325° and turn the meats on top every so often so they don't char. - Remove from oven and cut or pull meat off all the bones. Refridgerate until next day. Day of: - Reheat at 350° for 1 hour or until heated through. During last 20 mins or so, layer breadcrumbs on the top and let it bake into a nice crust. Yum. I'm sure I'll get yelled at for daring to call this a cassoulet. My intentions are good! Not using a good garlic sausage and a duck confit is pretty heretical, but I think it's the beans and the long-stewed meats that really make this dish.

Recipe: 1.5 oz Ketel One vodka infused with very cooked bacon (right at burnt stage) 1.5 oz Grey Goose vodka infused with hot peppers 0.5 oz Dirty Martini mix (essentially olive juice, but store bought variety) dash of tobasco 2 Santa Barbara Company Sun dried tomato stuffed olives 2 Santa Barbara Company Blue cheese stuffed olives 2 Okra stalks Spicy bloody mary mix Combine the two infused vodkas + dirty martini mix + tobasco into a shaker tin with ice. Shake vigorously to well combine the ingredients. Pour off into a glass filled with ice. Top of the glass with spicy bloody mary mix and stir to lightly mix the tomato juice through the alcohol. Slice the okra up the middle and use as a garnish on the side of the glass and top off with the olives squeezing them gently to leave a bit of olive juice floating on top.
