Date Syrup

24 medjool dates, pitted and chopped
2 cups water
2 tsp. vanilla


1.   Combine all ingredients and bring to a boil.  Reduce heat and simmer for 15 minutes.  Cool.

2.   Place mixture in a blender and puree until smooth and completely blended.

3Store in refrigerator in an air-tight container. Stir the syrup before using.

Servings: 6

Yield: 3 cups
