Cinnamon Coffee Cake

Cinnamon Coffee Cake

1 cup whole wheat flour
1/2 cup almond meal
1 T. baking powder
2 tsp. cinnamon
1/2 tsp. salt
6 medjool dates, pitted and chopped
1 cup sour almond milk
1/2 cup applesauce
1 tsp. vanilla

Nut Topping
1 cup chopped walnuts
1 cup almond meal
1 cup date syrup
2 tsp. cinnamon



Procedure

1.   Using a blender, puree dates, sour almond milk, applesauce and vanilla.

2.   Combine flour, 1/2 cup almond meal, baking powder, 2 tsp. cinnamon and salt.

3.   Add date mixture to flour mixture and stir until combined.

4.   To make topping, combine walnuts, 1 cup almond meal, date syrup and 2 tsp. cinnamon in small bowl and mix well.

5.   Spray 8” square pan with cooking spray.

6.   Spread half of the batter into pan.  Drop half of the topping evenly over the batter.  Spread the remainder of the batter into pan.  Take a knife and swirl nut topping into batter.  Drop remainder of nut topping evenly onto cake.

7.   Bake at 350º F for 20-25 minutes.
